Jin Xuan Oolong is a hybrid cultivar produced by the government subsidized Tea Research Extension Station (TRES) in Taiwan and is registered as Tai Cha #12 . It was designed to possess a stronger immunity to naturally occurring "pests" in the regional climate of Taiwan while producing a somewhat larger leaf that increases yield. It is known for its buttery or milk flavor qualities and has a milder astringency and smoother texture. Gao Shan Jin Xuan Oolong is a wonderfully refreshing high mountain Milk Oolong. Created from a Jin Xuan cultivar, it is a high altitude Gao Shan hand-picked tea that is grown at an altitude of 600-800m in Meishan, next to the famous Alishan National Scenic Area. This growing location imparts a different character when compared to other milk oolong teas. While also exhibiting a milky aroma, mouthfeel and taste that the Jin Xuan cultivar is famous for, this flavour is alsofinely balanced by stronger green floral and fresh vegetal notes. The speciality of the leaves of Jinxuan are thick and tender, the tea leaves are green and shiny, the taste is pure and smooth, with a light milky and floral fragrance, the flavor is unique like sweet-scented osmanthus, finishes with a long-lasting lingering tastes. We recommend brewing Jin Xuan Oolong in the gongfu style, using a small teapot or gaiwan, to appreciate the wonderful aromatics and the unique flavors that unfurl over several infusions. Add tea leaves to fill the teapot about one-third full and rinse the leaves briefly with hot water. Pour the rinse water out and then refill the pot with hot water and let the tea steep about 45 seconds to 1 minute. Increase the steeping time by 10-15 seconds for each subsequent brew.
