Fannings are small pieces of tea that are left over after higher grades of teas are gathered to be sold. Traditionally these were treated as the rejects of the manufacturing process in making high-quality leaf tea like the orange pekoe. Fannings with extremely small particles are sometimes called dusts. In fact, fannings often make a stronger, sturdier brew than whole tea leaves (with the added benefit of being much cheaper). This makes them perfect for teabags. Just stash a jar in the cupboard and steep when needed. Like other green teas, it’s best to keep the water just below boiling. Popular grades of Fanning tea are – Golden Orange Fannings (GOF), Flowery Orange Fannings (FOF), Broken Orange Pekoe Fannings (BOPF ) and Flowery Broken Orange Pekoe Fannings (FBOPF). Most fanning tea bags produce strong flavour and can be sweetened with sugar as per the taste. This is a perfect tea for getting your daily dose of "greens." The tea is ground and sifted, with the finished tea leaves being only slightly larger than standard ground black pepper. This allows for lower weight by volume, with less tea going much much further. Fannings can create somewhere around 3X the number of cups of tea per oz that full leaf teas. Fannings require paper tea bags, cotton bags, or an infuser with small holes as to not allow for the small particles to pass through the infuser into the tea.
