Chunmee green tea is a well-loved, well known everyday tea. It has plenty of flavors, with a slightly smoky hint. This and Gunpowder green tea are often the first green teas that many people experience. These are often used as the base tea when flavoring green tea. Like other Chinese green teas, Chunmee is pan fired soon after harvest in order to halt the oxidation process. Teas that are pan fired tend to be lower in caffeine than teas that are steamed. The hotter the water you use, the more caffeine will be present in your tea. We recommend preparing Chunmee with water that is steaming, but not boiling. This lower water temperature will result in a less caffeinated cup, and also prevents the tea from burning or becoming bitter. We recommend steeping Chunmee for approximately one to two minutes. Like other green teas, Chunmee shouldn’t be oversteeped, since it can become bitter or too strong if infused for too long. Organic Chunmee should be made with cold, filtered water that has been brought to a boil and then allowed to cool for 1 minute (170-180° F). Using one rounded teaspoon of loose leaf tea or one teabag for each cup required, pour the boiling water over the green tea leaves. Our Organic Chunmee green tea should be steeped for 2-3 minutes. Once the ideal brewing time has been reached, the leaves should be removed to prevent further steeping.
